1/2 c. shortening
1 1/2 cups brown sugar (packed)
1 cup white sugar
2 eggs
1 tsp. vanilla
1 1/2 cups mashed pumpkin
3/4 cup raisins
1/2 cup chopped nuts
2 1/2 cups flour
3/4 tsp. soda
2 tsps. baking powder
1/3 tsp. salt
1/2 tsp. ginger
1 tsp. cinnamon
Cream shortening and sugars until fluffy, add eggs, blending well. Stir in nuts, pumpkin, eggs, vanilla. Blend well.
Sift dry ingredients 3 times and add to creamed mixture. Drop by teaspoonfuls onto greased cookie sheet. Bake at 375 degrees for 10-15 minutes. If desired, frost with cream cheese frosting.
