Irish Soda Bread

2 cups flour
2 T. brown sugar
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
3 T. butter or marg.
2 eggs
3/4 cup buttermilk
1/3 cup raisins (plumped and drained)

1.  In mixing bowl, combine flour, brown sugar, baking powder, baking soda and salt.  Cut in butter until crumbly.
2.  Combine 1 egg and buttermilk.  Stir into flour mixture just until moistened.  Fold in raisins.
3.  Knead on floured surface for 1 minute.  Shape into round loaf
4.  Place on greased (sprayed) baking sheet.  Cut 1/4 inch deep cross in top of loaf.
5.  Beat remaining egg and brush over loaf.
6.  Bake at 375 degrees for 30-35 minutes or until golden brown.

Serves 6-8
