Cheese Cake

(Graham cracker crust and topping for large frying pan size)

1 T. lemon juice
1 cup cream
4 eggs
1/2 cup sugar
1 lb. cottage cheese
pinch of salt
1 T. lemon rind
4 tsp. flour

(Sugar and lemon juice can be added or deleted according to taste)

Put lemon juice in cream to sour.  Beat eggs, sugar, cottage cheese, salt and cream with lemon juice and rind and strain through sieve.  Add flour.  Pour into graham cracker crust and put graham cracker topping on.

Bake at 350 for 1 hour.  Leave door open to cool.  Cake will appear to fall but just settles.  Serve warm or chill in refrigerator.
