Meat Loaf
1 Cup Chopped Onion
1 Stalk Chopped Celery
1 Tsp Oil
3/4 Tsp Thyme
1 Tsp Sage
1 1/2 lbs Ground Turkey
1 1/2 Cup Bread Crumbs
1 1/2 Peeled and Grated Apples
1 Large Egg beaten
2 Tbsp Chopped Parsley
1 Tbsp Dijon Mustard
3/4 Tsp Salt
1/2 Tsp Pepper
Sauce
Combine:
1 Tbsp Vinegar
1 Tbsp brown Sugar
1 Tbsp Dijon Mustard
Preheat oven to 400 degrees. Saute onion, celery, thyme and sage in oil. Let cool. In large bowl combine turkey, bread crumbs, apples, egg, parsley, mustard, salt and pepper with onion and celery, mix well.
Form into loaf or pack into 8x4 pan. Bake for 30 minutes at 400 degrees. Pour off fat.
Brush sauce over loaf and bake at 350 degrees for 30 minutes more or until juice runs clear when pierced with a fork.
Serve with cranberry sauce and all the trimmings.
