Soda Scones

2 cups flour
3/4 tsp. baking soda
3/4 tsp. cream of tartar
1/8 tsp. salt
1 tsp. sugar
1/8 pound butter (1/2 stick)
3/4 cup buttermilk

Sift the flour, baking soda, cream of tartar, salt, and sugar into a large bowl.  Cut in the butter with a pastry blender or a knife.  It can also be rubbed in with your fingertips until very thoroughly blended.  Stir in the buttermilk..  Turn onto a floured board and knead a little, for less than a minute.

Divide the dough in two.  Make a round out of one half and roll out to 1/2 inch thick.  Cut the round in four pie-shaped wedges.

Lightly oil or butter the griddle.  Heat slowly to medium hot heat.

Bake the first four scones 5 minutes on one side until risen and light brown, then turn and bake for a few minutes on the other side.

Repeat with the other half of the dough.

Yield: 8 large scones.
