2 - 1 1/4 lb. loaves day-old bread
2 cups diced celery
2 T. chopped onion
1 cup butter
2 tsp. salt
2 tsp. poultry seasoning
1/8 tsp. black pepper
Pull bread from crusts and crumble into fluffy crumbs, saute celery and onions in 1 cup butter for five minutes. Add to crumbs and seasoning and mix lightly until all crumbs are coated. Stuff turkey, packing loosely, as stuffing expands.
Bake at 300 degrees, allowing 15-20 minutes to the pound. 4 1/2 - 5 hours for 14-16 lb. turkey.
